INGREDIENTS

FOR RAGDA:

  • 1/12 cup  dried white peas
  • 4 cup water
  • ½ tsp turmeric powder
  • 1 tsp kashmiri red chili powder 
  • salt to taste

FOR PATTIES:

  • 6 medium sized boiled  potato,  and peeled
  • 6 tbsp or ¼ cup thick poha  washed
  • ½ tsp turmeric powder 
  • ½  tsp kashmiri red chili powder 
  • 1 spoon corn flour
  • salt to taste
  • ¼ tsp cumin powder 
  • 2 ginger green chilli paste
  • ½ tsp chaat masala
  • 10-12 mint leaves
  • oil for shallow  frying pattice
  • 5 tsp green chutney
  • 6 tsp tamarind chutney 
  • salt to taste
  • 1 tsp garam masala powder
  • For Garnish
  • Pinch of  kashmiri red chilli powder
  • pinch cumin powder 
  • pinch chaat masala
  • ½  onion, finely chopped
  • ½  tomato, finely chopped
  • 1 cup sev, as required
  • few coriander leaves,mint leaves  finely chopped

INSTRUCTIONS

  1. Firstly, pressure cook soaked white peas overnight or 7-8 hours with water,after  7-8 hours add  turmeric powder, chili powder and salt for 4-6  whistles.
  2. Once the pressure cooker  releases completely,open the lid and peas done and they should be cooked and  mash the peas. keep aside.
  3. also  add ,chaat masala , cumin powder, garam masala and salt.mix well .
  4. Now prepare pattice.
  5. Take a big deep  bowl of boiled mashed  and palled  potatoes, add the ginger paste and green chilli paste,  lemon juice, sugar,corn flour,thick poha and salt mix well. Keep aside.
  6.  This mixture is made of  a soft dough. Divide the dough into  equal portions.
  7. Take one portion and carefully flatten it between the palms of both your hands, making sure the patties do not break.
  1. Heat oil 1 tsp on a tava or fry pan.
  2. Once the oil is heated , place the patties on the tava and let them cook on a medium to low  flame for 5 to 7 minutes till golden brown and Turn the patties,and sprinkle them   1 tbsp of oil and let them cook on the other side on a medium to low  flame for 5-7 minutes till golden brown and crispy.finally patties is ready.
  1. Now take a wide   plate,  pour prepared ragada and place on  pattice.
  2. Additionally  pour more ragada and top with green chutney and tamarind chutney.
  3. Sprinkle red chili powder, cumin powder, chaat masala and salt.
  4. also top them with onions, tomato, sev,mint leaves  and chopped coriander leaves.
  5. Finally, serve hot ragda patties ready to eat.
  6. Serve and Enjoy!!! ragda patties chaat .
