1. 3 cups cashew
2. 4 tbsp honey
3. 1 cup sugar
4. 2 teaspoon water
1 Lightly roast the cashews on low flame. After cool down completley and keep a side.
2 Grind the cashews to a powdered form, not become oily or paste.
3 Grease a plate or a tray and keep aside or keep butter papers ready.
4 Again add the cashew to a pan and roast at low heat in few minutes (1-2 minutes)
5 Take a sauce pan and add sugar, water and powdered cashews. Mix well and make sure that there are no lumps.Mix and keep on stirring the cashew mixture non-stop on a low flame.The cashew mixture should start thickening.
6 Cook the kaju mixture for approx 4-6 minutes until the whole dough starts to come together and starts folding at the sides.
7 Place a butter paper on top and then using a rolling pin, roll gently the dough from all sides till you reach a thickness of 2 to 4 mm in the dough.pour the cashew mixture Let it cool down completely for 30 minutes.
8 Once cooled cut the katli into a diamond shape or your choice.
9 Serve the kaju katli straight away or keep in an airtight container.
